Last Week's Eats (9/16 - 9/22)

Here are some eats from the last week or so, in random order:




1. Lunch / Dinner: roasted butternut squash - on its own the first day, then the leftovers inside quesadillas the next (ours)
2. Dinner / Lunch: crispy baked tofu sticks (hers)
3. Lunch: sauteed squash, tomatoes, onion, broccoli, and spinach with a side of hummus (hers)
4. Dinner: tomato and grilled onion topped veggie burger, spinach salad, and apple and peanut butter (hers)
5. Lunch: fried egg and tomato on grilled sandwich thin (ours)
6. Snack, Lunch, Dinner: Spicy Garlic Hummus - I put it on everything!
7. Lunch: butternut squash and black bean quesadillas with veggie shreds (hers)
8. (Birthday) Dinner: garlic and butter topped steak, double baked potato, big salad (his)
9. Dinner: Southwest Quinoa stuffed peppers and summer squash ratatouille (ours)


Treats from the week:










Snack: Chocolate Dipped Coconut Luna Bar - my first time for this flavor. It was delightful.

Breakfast: REAL pancakes, as in they contained flour and wild blueberries, instead of banana, egg whites, and protein powder. They were light and fluffy and wonderful.

Snack: dried mango, yum

Dessert: Pumpkin Pie Lasagna - dinner with friends gave me the excuse to make this. It's a take on what we call Eclair Cake but made with pumpkin mousse. I didn't have any mini chocolate chips so I used chocolate curls. Dangerous.

Treats from the week:
I had to include 2 pictures of "the best cake ever" because I had 2 pieces! It was my youngest's birthday cake and she dreamt it up herself. You might want to sit down for this: 3 tiers of chocolate fudge cake, each one brushed with sweetened condensed milk, a layer of chocolate cream cheese butter-cream frosting, a layer of butterscotch cream cheese butter-cream frosting, and then the sides and top frosted with plain cream cheese butter-cream frosting, on the sides half way up - chopped pecans, the rest of the way up - shredded sweetened coconut, then topped with chocolate and butterscotch chips.
OH  MY  GOSH - Best. Cake. EVER.

oh, and then, popcorn with raisins and peanut m&m's - big whoop.

11. Snack: Greek yogurt topped with granola and blueberries (hers)
12. Dinner: shredded crock pot chicken, roasted baby sweet potato, steamed veggies (his)
13. Breakfast: "green smoothie" with spinach, blueberries, pineapple, strawberries, vanilla protein powder, and soy milk, pretty much every morning (hers)


Recent Treats:
Double chocolate Fudge Chunk Velvet brand ice cream: while hiking for 5 hours, we stopped for a treat. This was the best ice cream EVER. Even though my stomach hurt for 2 hours after eating it (lactose sensitivity), it was so rich and delicious, it was actually worth the pain. I think.

Onion rings, at a restaurant: I'm glad we shared them among 4 people. They're good, but who really needs more than 2 or 3 onion rings? Now, the sauce they were served with? Different story. I just needed a spoon.

Meal Plan (5/13 -5/19)

Saturday meal planning and grocery shopping, along with Sunday food prep,
 can set you up for a successful week of healthy food choices. 

First, I go through my fridge, freezer, and pantry to see what might still be around from the previous week. Then I make my meal plan and grocery list. I may get to the store and make some changes based on sales or the looks of the produce, but the plan keeps me on track and prevents multiple trips to the grocery store throughout the week. As usual, our free day allows for a restaurant meal and dessert.

1.  Lunch: butternut squash, spinach, and cheddar jack veggie shreds quesadilla (hers)
2.  Dinner: clean-out-the-fridge-salad with curried lentils, carrots, grape tomatoes, guacamole, and Walden Farm's calorie free dressing (hers) with chicken (his)
3.  Breakfast: multi-grain cheerios with strawberries (his)
4.  Snack: caramel flavored pop corn chips, fat free cottage cheese, and fruit (ours)
5.  Lunch: sauteed zucchini, tomatoes, and onions in garlic flavored olive oil (hers)
6.  Lunch: turkey, cheese, lettuce, tomato, and hummus on a thin bun, veggies, and trail mix (his)
7.  Breakfast: green smoothie (his) Just kidding. (hers)
8.  Dinner: lemon garlic green beans, mashed sweet potatoes, and chicken sausage (his)
9.  Dessert: not-ice cream - 4 oz vanilla Greek yogurt, 1 frozen banana, 1 envelop sugar free hot cocoa mix, and 1 square dark chocolate blended together in the food processor (ours) (also -- YUM!)

Snacks, treats, and other munchies that we may or may not have eaten. Nah, we definitely ate them.










(I made 2 kinds of scones for a friend's day-after-the-wedding-brunch. The one pictured is maple bacon walnut flavored (his). I also made lemon blueberry almond scones (hers). And I have to measure nuts; otherwise my 'handful' serving is more like 3/4 of a cup....

This week was especially busy and I kinda felt like we weren't eating all that well. I was relieved when I looked back over my meal pics and realized we did okay. Phew.

7. Snack: Greek yogurt, veggies, and white bean/basil hummus (ours)
8. Treat: Trader Joe's dark chocolate with almonds (ours)
9. Breakfast: high fiber cereal mix [Fiber One and Kashi] and blueberries (hers)
10. Lunch: turkey, spinach, avocado wrap, grapes, and trail mix (his)
11. Dinner: sauteed veggie chop on couscous with roasted chicken (his)
12. Dinner: big green salad with lots of veggies, chick peas, sunflower seeds, and pork tenderloin strips (his) or tofu (hers)
13. Lunch: cold couscous veggie salad with cucumbers, peppers, tomato, onion, kalamata olives, and feta, drizzled with lemon juice and balsamic vinegar (ours)

Other random eats not pictured: lunch at Panera (soup and 1/2 sandwich), yogurt covered pretzels, a soy based dark chocolate protein shake (a sample from a friend - so tempted to buy a jug of it, but it's ridiculously expensive) and carrot cake wedding cake with cream cheese frosting -- I may or may not have licked the plate.

Not pictured: the enormous black bean burger and mountain of french fries I had at Pike's in Charlotte, the half pound bag of peanut m&m's I consumed upon returning from Charlotte, the multi-grain cheerios I had for lunch (twice), nor the 2 bags of popcorn we shared while watching the last 2 episodes of Hell on Wheels. So sad the show is over, but so mad about Lilly!!! Grrr.

If you've been reading this blog for any length of time, you probably know Saturdays have traditionally been my Meal Plan Day. And they still are. But I was afraid the Saturday meal plan post was becoming repetitive, boring, and repetitive. Using the labels on the left, you can easily access months of meal plans if you need ideas. I won't bore you each week by posting my plans for our breakfasts, lunches, snacks, and dinners for the upcoming week.

Instead, I will bore you with pictures of random meals we ate over the last week....

1. Dinner: Taco casserole: my honey's with ground turkey and cheese, mine w/tofu and veggie shreds; both versions have lots of veggies and flax seed tortilla chips from Trader Joe's. Yum.
2. Dinner: Salad with tofu, veggie chop, veggie shreds, and avocado
3. Snack: baby carrots, hummus, TJ's flax seed tortilla chips
4. Dinner: Curried lentils and sweet potatoes over butternut squash, topped with veggie chop
5. Breakfast: green smoothie- almost every morning, my go-to of late
6. Lunch: green salad with tofu and avocado
7. Lunch: salad with red beans and veggie shreds
8. Dinner: roasted broccoli and sweet potatoes
9. Dinner: Mixed veggie salad with spinach pesto dressing topped with veggie shreds
