This is a great dessert for when you've been asked to bring dessert but forgot you were supposed to until the last minute. You can whip it together quickly because there is no butter to soften and all the ingredients are likely already in your cupboard. You can throw it in the oven while you frantically change clothes and get ready and I may or may not be speaking from experience.
Then you can arrive at your function with a nice warm dessert in hand and everyone will think you must be completely together with impeccable timing. The warm fudge sauce that magically appears under the yummy cake is thick and rich and it doesn't seem possible that the whole dessert has no butter or eggs.

Hot Fudge Pudding Cake
What you'll need:
Cake:
1 cup buttermilk baking mix (Bisquick)
½ cup sugar
3 tablespoons cocoa
½ cup milk
1 teaspoon vanilla
What you'll do:
Preheat oven to 350. Mix the dry ingredients. Add milk and vanilla and mix well. Pour into a greased 8” square baking dish.
What you'll need:
Fudge sauce:
1/3 cup cocoa
½ cup sugar
boiling water
What you'll do:
Mix the sugar and cocoa together and sprinkle it evenly over cake batter. Then carefully pour 1 and 2/3 cup boiling water over the top and bake for 35-40 minutes or until top is firm and dry.
During baking, a cake layer forms on top and rich chocolate sauce is on the bottom. Serve warm with ice cream or dust with powdered sugar. (Serves between 6-9)
