Moist Pumpkin Bread without all the oil

  • I can't help it. I just want to bake pumpkin flavored goodies on these cold mornings...

So I did.

What you'll need:

1 cup canned pumpkin
3/4 cup sugar
3/4 cup sugar substitute for baking
1/2 cup water
1 small Greek yogurt (I used honey vanilla flavor)
2 eggs
1 Tbsp oil
2 tsp vanilla
1 tsp baking soda
1 tsp baking powder
2 cups flour
2 tsp pumpkin pie spice


What you'll do:

Mix it all up well and pour into loaf pan sprayed with cooking spray. Bake at 350 for about 60-70 minutes or until pick comes out clean. Cool in pan for 10 minutes then remove to wire rack to cool completely before slicing.
